Makes 1 large smoothie bowl
This breakfast bowl is 100% fruit-free, low in sugar, high in protein and healthy fatty acids. A subtle sweet taste is created with fresh mint, ginger, and local bee pollen. I love the creaminess created by the avocado and wanted to create something that kept this flavor intact without adding too much sweet.
My main motivation was that my craving for fresh nectarines was SO strong this morning I dove teeth first into one the second I bought it at the farmers market. By the time I arrived home, I was still somewhat hungry for a creamy, cool smoothie but didn’t want to add more fruit to my morning – too much can make my feel jittery or send me into a sugar-craving cycle throughout the day. There is no doubt that fruit is important for our health, but there are some good rules to keep in mind to get the most benefit out of the sweet stuff.
When I first started making smoothies for breakfast, I had done little research into how rapidly our bodies digest fruit and frequently used wayyyy too much for one meal. Because the body uses different enzymes to process fruit verses vegetables, it’s best to eat fruit in the morning or on its own. When eaten alone, your stomach and more easily processes fruits without overwhelming your system with too much sugar, which can result in gas or a crash.
As my cravings for sweets have decreased over the years, I’ve grown to truly love the taste of less sweet smoothies. Some mornings, I crave the more bitter taste of a fruit-free bowl. When I do use fruit, my ratio is one serving of fruit to three servings of greens. This prevents me from going too sugar crazy, which benefits everyone!
Next time you’re using the blender to create your breakfast, try reducing or eliminating fruit or using it simply as a garnish to top off your recipe.
- 2 cups of spinach
- 1 cup of fresh mint
- 1/2 large avocado
- 1 tablespoon ginger
- 2 teaspoons maca powder
- 1 tablespoon bee pollen
- 1 tablespoon hemp hearts
- 1 tablespoon pumpkin seeds
- 1 organic, free-range, egg yolk (optional)
- 2-3 cups of water (one bowl full)
- 6 ice cubes
- Combine ingredients in the blinder on high for 1-2 minutes until smooth
- Pour into a bowl and top with hemphearts, bee pollen, pumpkin seeds, avocado and fresh mint
