July may be National Watermelon Month (an actual thing), but to me, all of summer is for all of the watermelon and it’s good until the last days of August.
August. The month of hot summer days and long summer nights… when things start to wind down, but we still need the energy to eagerly squeeze the last bits of summer out of each day. And there really is no companion more perfect for you than watermelon. That’s because the nutrients in watermelon are beneficial to your body and activities during this season specifically. That means hydration, skin protection, relief from sore muscles, increased circulation and boosted sexual health. Yep, summer lovin’, for sure.
This recipe is good for the dog days to keep you hydrated, full of electrolytes and energized for a full day of play that moves you into the night. So before you peel off your summer skin, blend up this tasty treat for breakfast, lunch or a snack.
- 1 kiwi
- 1 cup of watermelon
- 1 cup of coconut water
- 1 cup of water
- 3 cups of greens
- 1 handful of cilantro
- 2 tablespoons chia seeds
- 1 teaspoon bee pollen
- Combine all ingredients into a blender on high for 2-4 minutes
- Once smooth, pour into a bowl and top with bee pollen, chia seeds, watermelon and kiwi
P.S. Did you know that watermelon is a fruit AND a vegetable? It is a proud cousin to the cucumber, pumpkin and squash… the perfect summer food to transition you into a new season.
