We have come upon mid-summer, which almost always means one thing. Zucchini is everywhere. Every where. This incredible fruit (which we commonly eat like a vegetable), grows like a weed in the summer sun. We joke that once we’ve picked one, there are three more to be used. If we’re to take nature’s cue on anything, I believe we are being told: eat more zucchini.
But when it feels like you’ve sliced it, shredded it, stuffed it and sautéed it and there are STILL zucchini to be used, it’s time to get creative with this magical plant because it is way too nutritious to burn out.
Before we jump into this tasty breakfast bowl I created for your summer glow, let’s talk a bit about what makes zucchini and summer squash so special. First of all, it’s the perfect summer food – high in water and rich in fiber, which means it will cool you down and fill you up while nourishing your digestive, circulatory and cardiovascular systems. The list of nutrients in this squash is long including vitamin B1, B6, B2, Vitamin A, Vitamin C, beta-carotene, magnesium (anti-inflammatory essentials), folate (great for pregnant women!), potassium (hello hydration!) and even protein.
Due to its anti-inflammatory and heart-health properties, it’s no wonder nature gives us a continuous supply of zucchini in the summertime. These are the organs and systems of your body that are asking to be nourished this season for optimal health. And now onto what you can do with it. Summer squash like zucchini goes well with most everything due to its mild flavor, which takes on the flavors it is paired with. It’s easy to get into a rut with squash, but I like to think of this ingredient as a canvas to create a colorful and tasteful masterpiece. This smoothie bowl is a great way to get out of the zucchini box and into something a bit more interesting. The zucchini adds a very mild, sweet flavor for a cooling and light bowl that is filled with fiber, protein and healthy carbohydrates to fuel your summer day. Mint and nectarine add even more nutrients and a lot of sweet flavor so you won’t feel like you’re eating squash or vegetables at all, I promise!
- 1 medium zucchini, sliced
- 1 large handful of spinach, baby kale or other leafy greens
- ¼ cup of fresh mint
- ½ avocado
- 1 nectarine
- 1 tablespoon chia seeds
- 1 tablespoon hemp seeds
- 1 teaspoon coconut oil
- 1 teaspoon Maca powder
- 1 teaspoon AWAKEN Beauty Herbal Blend (optional)
- 1 bowl of water (fill up the bowl you'll be eating out of and pour it into the blender)
- pumpkin seeds, shredded coconut, goji berries, hemp seeds, chia seeds
- Blend zucchini, greens, avocado and nectarine on high for 2-3 minutes until smooth
- Add seeds, oil and powders and blend for an additional 1-2 minutes
- Pour into your bowl and top with your choice of deliciousness (suggestions above!)
